Homemade Poke Bowl

Looking for a creative way to add both plant based protein and fish to your routine. Look no further than a homemade poke bowl!

Ingredients:

  • Sushi grade tuna, cut into cubes*

  • 1/4 cup soy sauce

  • 2 tsp rice vinegar

  • 2 tsp sesame oil

  • 1/2 ground ginger

  • 1/2 tsp sesame seeds

  • Dash red pepper flakes

  • Cooked sushi rice (follow package ingredients)

  • Shredded romaine lettuce

  • 1/2 -1 cucumber, sliced

  • 1 large carrot, cut into match sticks

  • 1 bell pepper, sliced

  • 1 ripe avocado, sliced

  • Shelled edamame

  • Pickled ginger

  • Seaweed paper, torn into small pieces

  • Sriracha mayo

Directions:

  1. Combine cubed sushi grade tuna in a bowl with soy sauce, rice vinegar, sesame oil, ground ginger, sesame seeds and red pepper flakes. Marinate for at least 30 minutes.

  2. While this marinates, cook your sushi rice based on the instructions on the back of the package or use this recipe (steps 1-4).

  3. Prepare your vegetables (lettuce, carrot, cucumber, pepper, avocado).

  4. Defrost the edamame beans if using frozen. I use this one.

  5. To assemble the bowl, start with your lettuce, top with the sushi rice and then layer on the vegetables, edamame beans, avocado, and marinated tuna. Add some pickled ginger and torn seaweed paper.

  6. Top with sriracha mayo!

  7. Enjoy!


* Some grocery stores sell pre-cut and pre-marinated sushi grade tuna. Take a look near the fresh fish counter to see if this is available in your area!
