This recipe is one of my favourite ways to use up ripe bananas! Super easy to double or triple the recipe if it is not just you and I highly encourage adding chocolate chips to these whole wheat banana pancakes!
Ingredients:
1/3 cup whole wheat flour
1/2 tsp baking powder
1 tsp cinnamon
1 tsp cocoa powder
1 tsp hemp hearts
1 tsp ground flax seed
1-2 tbsp chocolate chips (optional, but highly encouraged)
1 ripe banana
1 tsp vanilla
1/4 cup unsweetened plant based beverage (I use soy)
Directions:
In a bowl, mix together flour, baking powder, cinnamon, cocoa powder, hemp hearts, ground flax seed and chocolate chips (if using).
In another bowl, mash the banana. Stir in vanilla and unsweetened plant beverage.
Add the banana mixture to the dry ingredients and stir until combined.
Heat a medium frying pan on medium heat.
Spoon your batter onto the pre-heated frying pan. I usually dollop it into 3-4 rounds!
Enjoy! I love adding peanut butter and sliced bananas/strawberries on top!
