A tropical twist of the original Bircher's muesli using canned pineapple! Serves 1!
Ingredients:
1 apple, grated
1/4 cup canned pineapple tidbits
1 tbsp pineapple juice
1/3 cup large flake oats
1 tbsp chia seeds
1 tbsp large flake shredded coconut
1/3 cup plain Greek yogurt
2 tbsp unsweetened plant milk (or cow's milk)
Directions:
Grate one apple (unpeeled) and place it in a medium bowl.
Add in pineapple tidbits, pineapple juice, oats, chia seeds, coconut, greek yogurt and milk. Stir together.
Cover and let sit in the fridge for 30 minutes to an hour.
Top with additional shredded coconut, pineapple and nuts/seeds.
